Is it possible to remove the menus Fun, Flags, Other in the section where visitors can choose and image?

Yes of course. If you want to disable them, you can do this in your admin area of the script where you configure the grid. If you want to delete a logo folder, login via FTP to your server and delete the respective folder in the directory logo/. You can also add your own logo folder and upload logo images into it. To change the name of the folders, please checkout the file "language.php" which is located in your language directory "lang/" and scroll down to the bottom of the script for instruction.
